Ryedical Bircher Muesli with Grated Apple

Bircher muesli was invented as a raw, soaked breakfast over a century ago, which makes it a natural home for Ryedical: everything softens together in the fridge overnight and nothing goes near heat. The grated apple (skin on, where the fibre lives) does the sweetening.

Method

  1. Stir the oats, Ryedical rye bran, grated apple, yoghurt, milk or juice, and lemon juice together in a bowl or jar.
  2. Cover and refrigerate overnight.
  3. Loosen with a splash of milk if needed, then top with chopped nuts or seeds and serve cold.

Notes

The lemon juice keeps the apple from browning. Between the oats, apple with skin, and a tablespoon of Ryedical (about 5g of fibre†), this bowl carries roughly 10g of fibre before the toppings.

Contains gluten. Not suitable for people with coeliac disease or non-coeliac gluten sensitivity.
