Ryedical Chia Pudding

Chia pudding sets in the fridge, not on the stove, which makes it another natural home for Ryedical. The bran softens into the pudding as it sets and adds a gentle, nutty depth under the vanilla.

Ingredients

Method

  1. Whisk the chia seeds, Ryedical rye bran, milk, vanilla, and honey together in a jar or bowl.
  2. Rest for 10 minutes, then whisk again to break up any clumps.
  3. Cover and refrigerate for at least 4 hours, or overnight, until set.
  4. Top with fresh fruit and serve cold.

Notes

The second whisk is the difference between pudding and clumps; don't skip it. Chia and rye bran together make this one of the densest fibre bowls in the collection: roughly 12g per serve, with about 5g from the tablespoon of Ryedical†.

Contains gluten. Not suitable for people with coeliac disease or non-coeliac gluten sensitivity. Both chia and rye bran absorb water, so have this one with a glass of water alongside.
