Ryedical Cacao Date Bliss Balls

Bliss balls are the batch-cooking of the no-cook world: fifteen minutes with a food processor and the fridge is stocked for the week. The dates bind, the cacao makes them taste like more of a treat than they are, and two tablespoons of Ryedical work through the whole batch without announcing themselves.

Method

  1. Add the dates, nuts, Ryedical rye bran, cacao, chia seeds, and salt to a food processor.
  2. Process until the mixture clumps when pressed, adding a splash of water if it stays crumbly.
  3. Roll into 12 balls and coat in desiccated coconut if using.
  4. Refrigerate for 30 minutes to firm up, and store in the fridge for up to a week.

Notes

If your dates are firm, soak them in warm tap water for 10 minutes first (the water is for the dates, not the mix; everything else stays raw). Two or three balls make a serve with meaningful fibre from the dates, nuts, and rye bran†.

Contains gluten and tree nuts. Not suitable for people with coeliac disease or non-coeliac gluten sensitivity.
